At work we had a temp in accounting, named Susan, for over six months…while she was there, she brought in this delicious coffee cake, for which I clearly had to get the recipe! She attributed it to a friend of hers, whose name I do not know…so to give credit where credit is due:
Susan’s Friend’s Blueberry Coffee Cake
4c. flour
2c. sugar
1c. butter (the recipes says margarine, but no thanks!)
2c. buttermilk
2t. baking soda
2t. cinnamon
1t. cloves (I also added some freshly ground nutmeg)
Blueberries (fresh or frozen)
Preheat oven to 350C. Grease a 9×13 baking dish.
Mix the flour, sugar, and butter together with a fork until you get a fine, crumbly consistency. Reserve 1/2 cup of this mixture as topping. Add baking soda, cinnamon, and cloves, mixing thoroughly. Add buttermilk and mix until just moistened. Dump into baking dish, gently even out, and top with a generous amount of blueberries. Sprinkle with 1/2 cup reserved topping. Bake at 350C until done, approximately one hour.
